Advice for making perfect pie crusts

For dough that's less sticky, add ice-cold water
For a crispier crust, prick the entire bottom of the crust with a fork and then turn it over in the tray. While the tart is cooking, steam will escape through the tiny holes.
To seal your crust, brush a layer of unbeaten egg white over the crust before adding the filling. The crust will not get soggy from your tart filling!
