Vegetable Soup by Sarah, Stevenage
Ingredients:
1 onion - chopped
2 courgettes - sliced
1 tin chopped tomatoes
1 tin plum tomatoes - juice drained and chopped
2 large carrots - cubed
4 celery stalks - sliced
2 parsnips - peeled and cubed
1/2 swede - cubed
Salt and pepper
Put all ingredients into a large pan and add enough water to cover. Cook on a low heat for around 2 hours, adding more water if needed. Once cooked transfer to blender and blend just for a couple of seconds to chop and blend ingredients. serve with warm bread.
