Vegetable Soup by Sarah, Stevenage

Ingredients:

• 1 onion - chopped
• 2 courgettes - sliced
• 1 tin chopped tomatoes
• 1 tin plum tomatoes - juice drained and chopped
• 2 large carrots - cubed
• 4 celery stalks - sliced
• 2 parsnips - peeled and cubed
• 1/2 swede - cubed
• Salt and pepper

Put all ingredients into a large pan and add enough water to cover. Cook on a low heat for around 2 hours, adding more water if needed. Once cooked transfer to blender and blend just for a couple of seconds to chop and blend ingredients. serve with warm bread.
