Tomato and goats cheese tart

Ingredients:

• 4 tomatoes
• flaky pastry
• 3½oz (100g) grated cheese
• thyme
• 3 tablespoons olive oil
• 1 tablespoon mustard
• a roll of goats cheese
• 1 handful of chives
• salt and pepper

Method:

Chop the chives, cut the goats cheese into round slices and put to one side.
Place the flaky pastry and greaseproof paper in glass or stoneware pie dish. Prick the pastry with a fork to stop it rising during baking. Brush the base of the pie with mustard using a pastry brush.
Prepare the tomatoes by cutting them in half, then in half again or into round slices. Space out the tomato slices in the pie dish and cover with the slices of goats cheese before sprinkling with chives and thyme. Season with salt and pepper then spread the grated cheese over the top. Finally, pour the olive oil over the tart, add the rest of the cheese and place in an oven 180C/350F/ gas 4 for one hour.
