Sweet and Easy Yellow Chicken by Martin, Alloa

Ingredients:

• 1 yellow pepper
• 1 tin sweetcorn (well drained)
• 1 'lump' soft cream cheese (e.g Philadelphia)
• 1 big 'lump' lemon curd
• 4 chicken breast fillets

In a large Pyrex pan soften the sliced and deseeded yellow pepper over a medium heat. Add the sliced chicken breasts and stir occasionally until cooked. Add the sweetcorn, cream cheese and lemon curd. Stir continuously until all the ingredients are well heated and blended. Slap it on a dish with some steamed rice and veg'.
