Stuffed tomatoes

Ingredients:

• 10½oz (300g) minced beef
• 4 large tomatoes
• 9oz (250g) of rice, chives
• salad leaves
• cress
• one red pepper
• salt and pepper

Method:

Stuffed tomatoes – quick and tasty!

Wash the tomatoes and slice off the top to make a little hat! Remove the seeds and flesh with a spoon. Cook the rice on a medium setting in a plastic microwave dish with a 18 fl oz of water for around 8 minutes.
Mix the cooked rice, minced beef, chives, and salt and pepper in a bowl and stuff the tomatoes with this mixture. Put the tomatoes in a microwave dish. Cook in the microwave for 3-4 minutes. Place the hats on the tomatoes and put them back in the microwave for 3-4 minutes.
Prepare a bed of salad on each plate, place the tomatoes on the salad and sprinkle with cress. Cut the peppers lengthwise into thin strips and use them to decorate the dish – let your imagination run wild!
