Squid with peppers

Ingredients:

• 1lb 5oz (600g) squid
• 4 tomatoes
• a few leaves of basil
• 4 peppers
• 10 cloves of garlic
• 10 shallots
• salt and pepper.

Method:

Blanche the tomatoes in boiling water for twenty seconds. Taken them out of the water. Remove the stork and peel off the skin. Don’t worry – the skin will come off easily!
Wash the peppers, cut off the storks and remove the seeds and the white membrane. Cut into thin strips.
Arrange the tomatoes and peppers in a glass or plastic microwave safe dish. Season the squid with salt and pepper and place on top. Add the peeled and chopped shallots and two basil leaves to add flavour to the dish. Cover and place your dish in a microwave for fifteen minutes on the “cook” setting.
Remove the dish, pour into an attractive presentation dish, add a few leaves of basil, and serve immediately with garlic courgettes and boiled potatoes.
