Savoyard potatoes and melted cheese

Ingredients:

• 15 medium-sized potatoes
• 2 onions
• 4 tablespoons olive oil
• 2 cloves of garlic
• 13oz (400g) diced smoked bacon
• 1lb 2oz (500g) reblochon cheese

Method:

Peel and wash the potatoes. Peel the garlic and remove the green core, which is difficult to digest, and slice finely.
Top and tail the onions, peel them, cut them in half slices.
Cook the potatoes in a saucepan of salted water for 15 - 20 minutes. Cut them into cubes and fry them in a frying pan with a little oil. Add the onions, garlic and diced bacon . Place everything in a glass or stoneware gratin dish and season with pepper.
Cut the reblochon in half horizontally and place it on the potatoes with the crust facing upwards. Place it in the oven on 200°C/400°F/gas 6 and bake for around twenty minutes. The cheese should bubbling and golden brown. Serve immediately.
Chef’s Tip: Do not add salt since the Reblochon and bacon are already salty.
