SEASONAL EGGS

Ingredients:

6 eggs
1 litre of milk
200g of sugar
1 vanilla pod
100g of chocolate macaroons
Liquid caramel

Break the eggs and separate the whites from the yolks.
Whip the egg whites until stiff adding 50g of sugar little by little.

Bring the milk to the boil and keep it at a simmer.
Use a tablespoon to form spoonfuls of the egg white mixture and place them in the milk. Cook them for 2 minutes on each side.
Drain them on a cloth.

Filter the milk. Split the vanilla pod down the middle and add the seeds to the milk.

Whip the egg yolks with the rest of the sugar. Add the hot milk, and then transfer the mixture to a saucepan. Thicken for 8 minutes over a gentle heat while stirring constantly.
Remove from the heat when the cream mixture is thick enough to coat the spoon.
Leave to cool.

Pour 3/4 of the cream into a serving bowl. Sprinkle with crumbled macaroons. Pour in the rest of the cream, then add the egg white mixture and top with the liquid caramel.
