Provencal vegetable crumble
Ingredients:
3 tomatoes
1 Maggi Noix de Saveur Ail et Persil
stock cube
2 peppers
1 clove of garlic
1 courgette
1¾oz (50g) soft butter
1¾oz (50g) wholemeal flour
2 tablespoons of breadcrumbs (1oz/30g)
1¾oz (50g) grated Parmesan cheese

1. Preheat the oven to 220°C/425°F/ gas 7
2. Mix the flour, Parmesan cheese and breadcrumbs in a large bowl with the tips of your fingers.
3. Wash and dice the vegetables. Chop the garlic. Arrange the vegetables in a gratin dish and crumble the stock cube over the vegetables. Season with salt. Sprinkle the Parmesan over the crumble pastry.
4. Cook in the oven for around 35 minutes.
Chefs Tip: Add chunks of mozzarella cheese.
