Potatoes Au Gratin by Wendy, Eastleigh

Ingredients:

• 1 pound waxy potatoes, peeled and thinly sliced
• 1/2 teaspoon chopped fresh thyme
• 6 ounces heavy whipping cream (double)
• 1 clove garlic, chopped
• 1 teaspoon salt
• 1/2 teaspoon white pepper
• 1/2 cup of shredded cheddar cheese
• 1 ounce grated Parmesan cheese
• 1/4 cup of crumbled bacon

Cooking Time:

55 min

1. Preheat oven to 375 degrees

2. Combine cream, garlic, thyme, salt and pepper in a saucepan, bring to a simmer.

3. Add potatoes bring to a simmer until mixture thickens.

4. Turn off heat and stir in Parmesan then transfer to ovenproof dish.

5. Cover with foil and bake for 45 minutes.

6. Remove foil and bake for a further 10 minutes.

7. Sprinkle with cheddar cheese and bacon and bake for another 5 minutes.

My tip when you have peeled and sliced the potatoes cover them with boiling water unil the cream mixture is ready, this stops them from discolouring and starts the cooking process
