Potato pancakes

Ingredients:

• 1lb 9oz (700g) potatoes
• 4 eggs
• 3 medium-sized onions
• 3 tablespoons (5cl) oil
• 6 tablespoons (10cl) milk
• salt, pepper, nutmeg.

Method:

Peel and grate the potatoes and onions. Put them in a large glass bowl, add milk, oil and whisked whole eggs. Season with salt and pepper to taste. Add the nutmeg.
Pour the mixture into a greased glass or stoneware gratin dish. Make sure that the surface is level. Cook in a microwave for twenty minutes on the highest setting.
Add a few knobs of butter to the surface of the pancake. Place it under the grill of a conventional oven to give it a golden brown colour.
Remove the dish and leave it to cool for at least five minutes before serving.
