Parsnip Bake by Christine, London

Ingredients:

• 750 g Parsnips
• 50 Butter
• 4 tablespoons double cream
• 100 g Gruyere Cheese
• salt and Pepper to taste

Cooking Time:

15 min

1. Slice parsnips thinly and cook in boiling, salted water until tender. Drain.

2. Mash finely, beat in butter, cream and 80 g of the cheese.

3. Season to taste with salt and pepper

4. Transfer to a buttered pyrex dish

5. Cover with the remaining cheese

6. Brown in the oven at 220C for 10 to 15 minutes, until the top is golden

7. Serve with a crisp green salad
