Pan-fried steak with coriander and pistachio pesto

Ingredients:

2 beef steaks
30 g butter

For the pesto
1 garlic clove
1 small bunch of fresh coriander
4 tbsp olive oil
4 tbsp shelled unsalted pistachios
Salt and freshly ground pepper

Take the meat out of the refrigerator so that it is at room temperature. Peel the garlic, wash the coriander and dry it in a paper towel.

Put the garlic clove, coriander, pistachios, olive oil, salt and pepper in the blender bowl. Blend for a few seconds until you have a coarse paste.

Heat the butter in a non-stick frying pan and once hot put the steaks in. Season and cook for 3 minutes.

Turn the steaks over, spread the pesto around them and continue cooking for 3 minutes.
