Onion soup gratin

Ingredients:

• 10½oz (300g) onions
• 1oz (25g) flour
• 6 slices of stale bread
• 1oz (25g) butter
• 67½fl oz (2 litres) chicken stock
• 6 tablespoons (10cl) port wine
• 2oz (50g) Emmental cheese
• salt and pepper

Method:

First of all, peel and slice the onions into round slices. Sauté the onions in butter on a high heat in a stainless steel cooking pot until golden brown. Leave to soften on a low heat. Sprinkle with flour and mix well.
Add the stock and port wine. Season with salt and pepper. Remember, if you’re using a ready-made stock, you do not need to add salt - they usually contain enough already!
Leave to simmer for around 15 minutes with a bay leaf then pour into a glass or stoneware dish.
Grill the slices of bread and arrange over the other ingredients. Cover with grated cheese and brown under the grill. Serve immediately.
