Medallions of monkfish with pepper purée

Ingredients:

• 2 x 14oz (400g) monkfish tails
• 2 cloves of garlic
• 10½oz (300g) tinned peppers dill
• olive oil
• salt and pepper

Method:

Drain the red peppers, mix with the garlic and salt to taste. Pour the mixture into a microwave safe bowl or large basin and add two tablespoons of olive oil. Cover and cook in the microwave on the highest setting for around four minutes.
Cut the monkfish tails into twelve small round slices. Arrange them in a glass or plastic microwave safe dish, season with salt and add two teaspoons of oil. Cover the dish and cook the fish on the highest setting for two minutes on each side.
Remove the dish. Arrange several monkfish slices on each plate and sprinkle with a few pink peppercorns.
Finally, just before serving, add your pepper purée and a side of string beans, pasta or rice.
