Lime crusted haddock

Ingredients:

• 150g / 5oz butter
• 4 150g / 5oz portions of haddock fillet, de-scaled
• 100g / 4oz white breadcrumbs
• grated zest of 4 limes and/or 8 kaffir lime leaves shredded
• handful of fresh parsley, chopped
• freshly milled sea salt/black pepper
• 1 teaspoon of Dijon mustard

Method:

1. Preheat oven to 200°C/ 400F / GM6.

2. Rub a little of the butter over the base of the Oval Pyrex baking dish, and place the fish into the dish.

3. Mix the breadcrumbs with the lime zest and/or lime leaves in a bowl. Mix the parsley in with the readcrumbs, and then add plenty of seasoning.

4. Spread a thin layer of Dijon mustard over each fillet of haddock, then scatter the breadcrumbs over, pressing down lightly. Dot with the remaining butter and bake in a pre-heated oven for 15 minutes or until the crumbs are golden brown.

5. Serve with green beans.
