Leftover Turkey & Hollandaise Style

Ingredients:

• 1 lb (450g) broccoli
• 4oz (110g) mushrooms (sliced)
• 1 lb (450g) cooked turkey (or chicken) meat
• approx (500g) honey & mustard chicken cooking sauce
• 4 tablespoon mayonnaise
• 1tablespoon lemon juice
• 1 small pkt cheese and onion crisps (crushed)
• 2 oz (50g) cheddar cheese (grated)
• salt and pepper

25 min

Method:

1. Arrange the cooked broccoli around the edge of the dish with the florets facing outwards, stalks to the centre.

2. Place the raw mushrooms down the centre of the dish (slightly over-lapping the broccoli stalks), followed by the turkey meat.

3. In a bowl combine the cooking sauce, mayonnaise and lemon juice and mix together. Season with salt and pepper.

4. Pour the sauce over the turkey meat.

5. Sprinkle the crisps all over the top of the sauce, followed by the grated cheese.

6. Bake in a pre-heated oven for 25 minutes, or until bubbling and golden.
