Irish-style Whiting Fillets

Ingredients:

- 4 whiting fillets (180g each)
- 4 tablespoons whisky
- Juiced 3 oranges
- 2 onions, diced
- 1 tablespoon of fresh ginger, grated
- Salt, pepper

Side dish:

- 2 small courgettes, sliced
- 4 tomatoes cut into 8 wedges each
- 2 garlic cloves

Cover the bottom of a rectangular Pyrex oven dish with the onion then add the whiting fillets. Season with salt and pepper; add the ginger and pour over the orange juice. Let sit for two hours in the refrigerator, flipping the fillets after one hour.

Remove the fillets from the dish and wipe them with paper towels to remove the excess ginger. Place the fillets in a microwave-safe dish and cook them on high for three minutes.

In a saucepan, heat the whisky to boiling and pour over the fillets. Light with a match; when the flame burns out, the fish will be ready to enjoy.

You can serve this dish with a mix of courgettes and tomatoes that you have cooked in a sauté pan or in the microwave using a Pyrex glass casserole dish with its cover on (18 minutes on full power).
