Hake with peppers
Ingredients:
1lb 5oz (600g) of sliced hake
a few leaves of basil
chives
4 tablespoons fromage frais
6 peppers
2 low fat beef stock cubes diluted in a glass of warm water.

Wash and cut the peppers in half. Remove the seeds and white membranes and chop into fine strips.
Place half the peppers in a deep microwave safe dish. Pour the stock over the peppers. Add several dollops of fromage frais and the fish slices. Season with pepper. Add half the chopped chives and basil.
Cover with a layer of the remaining peppers, fromage frais, salt, pepper, basil and chives. Cover and place in the microwave for 15 minutes on the highest setting.
As a tasty alternative, try cod or salmon instead of hake and substitute yoghurt for fromage frais.
