Haddock Smockeys by Ana, London

Ingredients:

• 1 tomato, deseeded and chopped
• 10 oz smoked haddock fillet, skinned and cut into small chunks
• 3 oz ready-grated mature cheddar
• 5 fl oz whipping cream
• freshly ground black pepper

You will also need
4 Pyrex Glassware Ramekins

1. Preaheat the oven to 220C, fan 200C, gas 7

2. Scatter half the tomato among the 4 dishes

3. Arrange the smoked haddock on top and sprinkle over half of the cheese.

4. Scatter over the remaining tomato, season with pepper,pour over the cream and sprinkle with the remaining cheese

5. Place on a baking sheet and bake on the middle shelf of the oven for 15 minutes until the tops are bubbling and golden brown.
