Grilled Poussin with Lemon and Mash Potato
Ingredients:
2 poussins (300g each)
1.5 lemons
3 sprigs of fresh thyme
6 potatoes, 50g (2 oz) each
Salt and pepper
150ml (5 fl oz) cream
(crème fraîche)
60g butter
100ml (3.3 fl oz) olive oil
4 x Mini Square Casserole Dishes

10 min- Preheat the oven to 260°C (8-9). Peel the potatoes and cook them in boiling water. Mash them with a fork and stir in the butter, 50ml olive oil and the cream.
- Chop the poussin legs and breast fillets and place them in the mini square casseroles with 50ml olive oil and some thyme, then roast in the oven until the skin is golden brown. Add a little lemon juice.
- Remove the meat and gravy from the mini square casseroles. Place the mashed potatoes in the mini square casserole, then a leg or breast and season to taste. Add more lemon juice and the gravy. Cook covered in the oven (160 °C, 5-6) for 10 minutes.
