Gratin of soft fruits

Ingredients:

• 150ml (5 fl oz) Greek yoghurt
• 150ml (5 fl oz) whipping cream
• 1 egg yolk
• 1 tablespoon orange flower water & 1 tsp rosewater
• 60g (2.1/4 oz) caster sugar
• 300g (11 oz) mixed soft fruits, such as strawberries, blackberries, raspberries

Method:

1. Preheat grill to highest setting.

2. Mix together the Greek yoghurt, whipping cream, egg yolk, orange flower water and rosewater and 2.1/2 tbsp of the sugar and beat until they form a smooth velvety cream.

3. Place the fruit into the Pyrex gratin dish and spoon over the cream sauce to cover the fruit completely.

4. Sprinkle the remaining sugar over the cream sauce and place under grill until the cream begins to bubble and brown.

5. Remove and serve immediately
