Gratin of Haddock and Potatoes

Ingredients:

• 50g (2oz) boiled new potatoes or tinned potatoes
• 125g (4oz) skinless haddock fillet (naturally smoked, if possible)
• salt and freshly-ground black pepper
• 25ml (1fl oz) fish stock or water
• 175g (6oz) ready made cheese sauce, warmed
• 25g (1oz) grated cheese (optional)

Method:

1. Slice the potatoes and place in a Pyrex dish.

2. Place the haddock fillet on top of the potatoes, and season to taste.

3. Pour over the fish stock or water and cover with lid. Place in microwave (750/800W) and cook on a MEDIUM HIGH for 3 - 4 minutes.

4. Pour the ready made sauce over the haddock then sprinkle with the grated cheese (if using).

5. Place under grill until golden brown.
