Gratin of Haddock and Potatoes
Ingredients:
50g (2oz) boiled new potatoes or tinned potatoes
125g (4oz) skinless haddock fillet (naturally smoked, if possible)
salt and freshly-ground black pepper
25ml (1fl oz) fish stock or water
175g (6oz) ready made cheese sauce, warmed
25g (1oz) grated cheese (optional)

1. Slice the potatoes and place in a Pyrex dish.
2. Place the haddock fillet on top of the potatoes, and season to taste.
3. Pour over the fish stock or water and cover with lid. Place in microwave (750/800W) and cook on a MEDIUM HIGH for 3 - 4 minutes.
4. Pour the ready made sauce over the haddock then sprinkle with the grated cheese (if using).
5. Place under grill until golden brown.
