GRANNY SMITH APPLE AND LIME TARTS
Ingredients:
1 roll of puff pastry
2 Granny Smith apples
2 tablespoons of acacia honey
1 piece of lime peel
The juice of 1/2 a lemon
25g of butter
1 level tablespoon of pistachio nuts
2 tablespoons of icing sugar

20 minPreheat the oven to 200°C (gas mark 7)
Using a mug or a large glass, cut out circles measuring around 9 cm in diameter in the puff pastry. Place on a baking sheet and cover with a sheet of baking parchment; place another baking sheet on top to stop the pastry from rising. Place in the oven and cook at 200°C for approximately 20 minutes. Remove from the oven, sprinkle with icing sugar and place under the grill for a few seconds. Be careful! The icing sugar caramelises very quickly so do not leave the oven unattended.
Peal the apples and cut into four and then cut each quarter into four.
Heat the butter, the lemon juice and the honey in a frying pan. Add the apple and cook on a low heat without browning until tender (around 15 minutes), add the lime zest at the very end.
On each piece of pastry, place 4 slices of apples and sprinkle some crushed pistachio nuts.
Return the frying pan to the heat while adding 2 tablespoons of water to deglaze the mixture. Allow the mixture to thicken and then coat the tartlets.
My tips: If you do not have any pistachio nuts, you can sprinkle the tartlets with crushed hazelnuts or cinnamon. I've also done this recipe with pears (which cook faster than apples); it is delicious.
