Fresh Tomatoe & Sorrel Soup by Rita, Harrow

Ingredients:

• 8 small/medium sized tomatoes
• 1 cube of vegetable stock
• 1 pack of sorrel
• salt and freshly ground pepper to taste
• 1 knob of butter
• 1 tablespoon of olive oil

Preparation Time:

Cooking Time:

20 min

1. Heat some water (enough to cover all of the tomatoes). Once the water is boiled put in a large bowl and add tomatoes. After 2 minutes, peel off the skins and chopp the tomatoes into halves.

2. Heat a large saucepan and add the knob of butter and tablespoon of oil.

3. When butter has melted add tomatoes and cover pan for 6 mins.

4. Take stock cube and add water (as per instructions on stock cube packet).

5. Add stock mixture to tomatoes and leave it simmering for 10 minutes;

6. Add salt and pepper to taste, roughly chop the sorrel and add to the soup and let it wilt for a minute.

7. Soup is now ready, serve with fresh crusty bread.
