Easy Peasy Fishy Jackets by Angela, Southport

Ingredients:

• 2 largish potatoes (scrubbed)
• 2 fillets of skinless boneless fish (salamon)
• 1 pkt garlic flavoured white sauce
half pint of milk
• 2 large tomatos

Cooking Time:

30 min

Put potatoes in oven (at 200) for an hour.
Cook fish (in tinfoil in oven or simmered in the milk)
Make the sauce following instructions on packet
Halve tomatos and cook in oven 20 minuttes
When potatoes are soft scoop out flesh, mash with half the sauce, flake fish and add (can also add any chopped up, left over, spring onions). Put empty skins in pyrex dish and scoop potato/fish mixture back into skins and pour some sauce over the top (can sprinkle grated cheese if you wish) and return to oven to brown.
Serve with broccoli or salad.
An easy healthy suppe meal-its jolly filling too.
