Easy Banana Bread by Joanne, Warringhton

Ingredients:

• 4-6 bananas
• 2 oz chopped walmuts (optional)
• 4 oz self raising flour
• 2 eggs
• 4 oz sugar (pref. light muscovado)
• 4 oz butter
• 1/2 teaspoon nutmeg (mixed spice can be substituted)

1. Cream together butter and sugar
2. beat eggs and slowly mix into butter & sugar mix
3. sift flour, mix in nutmeg and gradually fold into mix
4. mash bananas and fold them and walnuts into mix
5. pour into greased 2lb loaf tin
6. bake at 160c for an hour (until skewer comes out clean)

can be served hot (gorgeous with custard) or cold
