Chocolate orange cake

Ingredients:

• 3½oz (100g) FRANCINE cake flour
• 2oz (60g) Régilait powdered skimmed milk
(7½ tablespoons)
• 7oz (200g) Lindt cooking chocolate
• 4oz (120g) sugar
• 3 eggs
• 3 oranges (zest and juice)

1. Melt the chocolate with a drop of water in a bain-marie (or a microwave).

2. Zest and press the oranges.

3. Mix the sugar, powdered skimmed milk, cake flour and orange zest in a large bowl.

4. Stir the mixture into the orange juice gradually. Add 3 egg yolks and the melted chocolate.

5. Stiffen the egg whites in a Kenwood Chef food processor and fold into the other ingredients.

6. Cook on 150°C/300°F/gas 2 for 45 minutes in a non-stick Pyrex baking dish. The cake must be very moist at the centre. Leave to cool before removing from the dish.
