Chocolate and hazelnut cake

Ingredients:

• 7oz (200g) dark chocolate
• 3½oz (100g) roasted hazelnuts
• 5 eggs
• 5½oz (150g) caster sugar
• 5½oz (150g) butter
• a pinch of salt.

Break the chocolate into small pieces and melt for 2 minutes in a microwave safe dish, with two tablespoons of water. Add the diced butter and melt the mixture in the microwave for one minute.

Break the eggs and separate the yolks from the egg white. Add the yolks and the sugar to the melted chocolate and butter and stir well. Whisk three of the egg whites until firm and add a pinch of salt. Carefully fold the egg whites into the mixture with the roasted hazelnuts. Keep some of the hazelnuts for decoration.

Butter a glass cake pan and coat with flour. Pour the mixture into the dish. Place the dish in a microwave oven and cook for seven minutes on 650W. You can tell that your cake is cooked by piercing it with a knife. The inside of the cake should be dry.
Finally, remove the cake from the dish and decorate with the remaining roasted hazelnuts.
