Chicken and Broccoli Bake by Karen, Maidstone

Ingredients:

• 4 skinless chicken breasts
• 1 head of broccoli
• 1 can of condensed chicken soup
• 1/4 pint single cream
• 2 tablespoon mayonnaise
• half teaspoon ground coriander
• half teaspoon ground cumin
• 4 oz mature cheddar cheese, grated

Cooking Time:

45 min

Break the broccoli into small florets, cook the for 3-4 minutes in boiling water and drain.
Arrange the chicken and broccoli in your Pyrex dish.
Mix together the soup, cream, mayonnaise and spices and pour evenly over the top of the chicken and broccoli.
Top with the grated cheese and bake at 180 degrees for 45 minutes.
Ensure chicken is thoroughly cooked before serving with rice or salad and warm crusty bread (perfect for mopping up the lovely rich sauce!).
