Chicken Cheat by Christine, Chalfont St Peter

Ingredients:

• 2 tbls oil
• 25 g butter
• 8 chicken thighs
• 270 g can of condensed mushroopm soup
• 4 tbls single cream
• 225 g button mushrooms, slied
• 4 tbls of dry sherry
• salt and pepper to season
• fresh tarragon to sprinkle on top if available.

Cooking Time:

60 min

Heat the oil and butter in a large flameproof cssserole. Brown the chicken thighs on all sides. Mix up the soup with the remaining ingredients and pour over the chicken. Season with the salt and pepper. Cover and bake at 190C/375F for and hour or until the chicken is cooked through. Sprinkle on the tarragon to serve.
