Cheese Pudding with a Twist

Ingredients:

• 4oz (110g) white breadcrumbs
• 4oz (110g) full flavour cheddar-type cheese (grated)
• 1½ oz (35g) parmesan cheese (grated)
• 5 spring onions (cut into small pieces)
• 2 eggs (separated)
• 2 pinches of salt
• ¾ pt milk (warm but not hot)
• 1 slice of buttered bread (cut into 4 triangles)
Topping
• A sprinkling of paprika
• 1 oz (25g) grated cheese

Method:

1. Place the breadcrumbs, cheeses, onions, egg yolks and salt into a bowl, mix well, add the warm milk and stir. Whisk the egg whites until stiff and gently fold into the mixture.

2. Pour the mixture into the greased Pyrex dish and decorate the top with the triangles of bread, butter side up. Dust with paprika and sprinkle over the remaining cheese. Place into the pre-heated oven and cook for approximately 30 minutes, or until set, golden and firm to touch. Serve with a light herb salad.
