Cauliflower Cheese
Ingredients:
1 large Cauliflower
320ml (300ml) Milk
110g Cheddar Cheese, grated
3 tbsp Plain Flour
45g (50g) Butter
25g Fresh Breadcrumbs
½ tsp Mustard
Nutmeg
Salt & Black Pepper
1 Pyrex Rectangular Roaster
1. Trim the cauliflower and boil in salted water for 10-15 minutes or until just tender. Drain and place in the rectangular roaster
2. In a saucepan heat the milk and add the flour and butter. Keep stirring continuously until the sauce thickens and is smooth.
3. Allow to simmer for a further 2 minutes. Introduce three quarters of the grated cheese, mustard, a pinch of nutmeg and seasoning and cook for further minute, continuing to stir
4. well.
5. Pour the sauce over the cauliflower.
6. Mix the remaining cheese and breadcrumbs together, sprinkle over the top and place under a hot grill until golden brown.
7. Serve immediately.
