Butter pancakes with lemon and apple

Ingredients:

• 9oz (250g) of FRANCINE Fluide flour
• 3 eggs
• 2oz (50g) Régilait milk powder
• 18 fl oz (50cl) water
• 2 pinches of salt
• 1 tablespoon oil

1. Put the flour and milk powder in a large bowl.

2. Make a hollow in the centre of the mixture and add the eggs one by one. Add the salt, oil and a glass of water.

3. Mix with a wooden spoon. Add the rest of the water gradually. Cover with a cloth and leave to stand for two hours in a cool place.

4. When you come to use the pancake mix, add a drop of water: the mixture should be runny. Pour a ladle of pancake mix into a very hot and lightly oiled frying pan. Cook on each side for 1 to 2 minutes.

5. Garnish with a knob of butter and sugar, a few drops of lemon and light brown sugar, or chopped Royal Gala apples cooked in a saucepan with a little butter.
