Burgundy style beef

Ingredients:

• 2½oz (70g) oz butter
• 3lb 5oz (1.5kg) shoulder of beef
• 1 tablespoon flour
• 1 bottle of red Burgundy wine
• 18 fl oz (50 cl) beef stock
• 4 cloves of garlic
• 1 bouquet garni
• 5½oz (150g) smoked bacon
• 7oz (200g) small onions
• 10½oz (300g) mushrooms
• 1 teaspoon of Fine de Bourgogne (Burgundy brandy).
• salt and pepper

Brown the diced beef in 2oz (50g) of butter in a stainless steel cooking pot. Coat with flower and season, then add the wine and beef stock. Add the peeled garlic gloves and the bouquet garni. Bring the pot to a gentle simmer, cover and leave to cook for at least two hours.
Sauté the bacon, small onions and mushrooms in the rest of the butter. Ten minutes before the meat is cooked, add the ingredients, fried to taste, and leave to simmer for another ten minutes.
Before serving, pour the Fine de Bourgogne into your cooking pot, stirring constantly.
