Wafer Nicoise

Ingredients:

• 1pkt (200gms) ready rolled puff pastry
• 1 tin (400gms) of chopped tomatoes
• 4oz (100gms) goats cheese
• 8 pieces anchovy
• 8 black olives
• salt and freshly-ground black pepper
• fresh or dried basil for sprinkling
• olive oil for drizzling

Method:

1. Preheat oven to 220ºC/GM7/425ºF

2. Lay the ready roll pastry on a flat surface and cut out 4 saucer-sized circles

3. Place onto pre-greased Pyrex multi-purpose tray

4. Spoon the tomatoes into the centre of each pastry circle, allowing the sauce to come within 1 cm (1/2 inch) of the edge

5. Next divide the goats cheese, anchovies and olives between the four pastry circles

6. Season with salt and freshly ground pepper, then sprinkle each circle with basil and drizzle over a little olive oil

7. Place the baking tray into a pre-heated oven for 10 minutes or until golden brown
