Vegetarian Nachos by Wendy, Aberdeen

Ingredients:

• 1 onion
• 2 cloves garlic
• 1 leek
• 1 pepper
• 1 courgette
• Any other veg you may wish to add
• 1 large jar salsa
• 1 packet tortilla wraps
• 1 packet tortilla chips
• grated mozarella cheese

Preparation Time:

10 min

Cooking Time:

30 min

Fry the onion, garlic and leek in olive oil until soft. Add the remainder of the vegetable ingredients.
Wrap the cooked items into 4 tortilla wraps and place in an ovenproof dish.
Spoon over the salsa.
Crush the tortilla chips and cover over the salsa.
Sprinkle the mozarella cheese over the top.
Bake in a preheated oven for 20-30 minutes approx gas 6.
