Stuffed Peppers by Amanda, Towcester
Ingredients:
3 peppers
150 g of couscous
2 carrots
8 mushrooms
Grated cheese
1 onion
Preparation Time:
5 minCooking Time:
30 minPlace peppers in a pyrex dish and cook in the microwave for 2 minutes
Meanwhile in a frying pan saute the onion, the sliced carrots and mushrooms.
Cook the couscous as per instructions.
Mix the sauted vegetables into the couscous mixture and stuff the peppers with the mixture. Spinkle the grated cheese on top.
Cook the stuffed peppers uin a preheated oven at 200 degrees celcius for 30 minutes until the cheese has melted.
Serve with a mixed salad
