Smoked salmon salad and salmon steak papillotes

Ingredients:

• diced smoked salmon
• 4 salmon steaks
• Batavia lettuce
• whites of 2 leeks
• 3 eggs
• a few leaves of basil
• chives
• parsley
• thyme
• French dressing
• 4 cloves of garlic
• 2 shallots
• salt and pepper

Method:

Wash, drain and roughly cut the salad. Boil the eggs and cut them into round slices. Place the salad around the edges of the basin with the eggs, salmon and chives in the centre. Mix the garlic, parsley, half a shallot and the herbs in a food processor. Pour the mixture over the salad at the last moment.
Prepare the papillotes:
Cut out two large sheets of aluminium foil. Place the salmon on the foil and add a tablespoon of yoghurt mixed with the herbs. Put four leaves of chopped basil and the pears cut into thin slices. Carefully arrange the papillotes in a glass or stoneware dish and place them in a hot oven on 180°C/350°F/ gas 6 for around twenty minutes. Bon appétit!
