Smoked Salmon and Preserved Lemon Mini Loaves

Ingredients:

• 3.75 oz (1/2 cup) smoked salmon
• 3 eggs
• 5 oz (2/3 cup) all-purpose flour
• 1/2 oz (1 tablespoon) baking powder
• 3.75 oz (1/2 cup) melted unsalted butter
• 1/2 cup milk
• 1 pinch of salt
• 1 ounce (2 tablespoons) fresh chives, cleaned and placed on kitchen roll
• 3 slices preserved lemon

Preparation Time:

Cooking Time:

20 min

1. Preheat oven 400°F.
2. Butter and flour 3 small pans or one large loaf pan.
3. Dice the smoked salmon, chop the chives and the preserved lemons.
4. Beat the eggs and blend in all the ingredients.
5. Pour the batter into the prepared pan(s) and leave it to rise at room temperature for an hour.
6. Bake for 12 to 20 minutes, according to size.
7. Remove from the oven, transfer to a rack to cool and remove from pan.
