Recipe
Small pears with meringue.
Ingredients:
8 small pears
10 tablespoons water
a pinch of cinnamon
4 teaspoons liquid sweetener or fructose
2 eggs white and two oranges

Peel the pears and remove the core. Arrange them in a glass or plastic microwave safe dish. Add water, cinnamon and one tablespoon of sugar. Cover and cook in the microwave on the cook setting for around five minutes.
Add a pinch of salt to the egg whites. Whisk slowly at first and gradually pick up speed until stiff, otherwise the whites may not thicken. They should form peaks and be thick enough to stand a spoon upright! Add the fructose and continue to whisk until stiff.
Arrange the pears in another dish and spoon the egg white over the top.
Cook in a microwave for around 9 minutes on the highest setting.
Simply garnish the dish with slices of orange and serve hot or cold. Good appetit!
