Provencal style chicken papillotes

Ingredients:

• 4 chicken breasts
• 2 courgettes
• 1 onion
• 2 tomatoes
• mustard
• dried herbs
• salt and pepper

Method:

Cooking utensils: 4 sheets of parchment paper or aluminium foil, a glass or stoneware ovenproof dish.
Preheat your oven. Coat the four chicken fillets with mustard and place them on sheets of parchment paper or aluminium foil.
Wash and cut the courgettes, tomatoes and onions into round slices and arrange them over the fillets. Season with salt and pepper and add the dried herbs. Close the paper and aluminium envelopes (“papillotes”) taking care not to tear the paper. If the hot air in the papillotes “escapes”, the meat will cook less well. Place everything in your dish and cook for 25 minutes on 180°C, 350°F, gas 4.
Use turkey as a tasty alternative to chicken.
Serve the dish with rice mixed with the meat juices, and a side of onions, tomatoes and cooked courgettes.
