Mustard chicken

Ingredients:

• 1oz (30g) butter
• 1 tablespoon oil
• 1 tablespoon water
• 2 teaspoons mustard seeds
• 2 teaspoons Maïzena cornflour
• 1 onion
• 4 chicken breasts
• 10 fl oz (300ml) cream
• 1 chicken stock cube

Method:

Mix the butter, oil and chopped onion in a shallow dish. Place the mixture in a microwave on the highest setting for around 4 minutes, stirring once. Remove the dish and transfer the mixture to another dish.
Place the chicken fillets in the same dish, cover and cook for ten minutes in the microwave on a medium setting. The meat must be just cooked. Once cooked, remove the dish and keep it warm.
Add the sauce prepared earlier to the crème fraîche, mustard, chicken cube and cornflour mixed with water to the dish. Cook together for 3 minutes in the microwave on the highest setting until the sauce thickens. Remember to stir once during cooking.
Remove the dish and serve the sauce separately.
