Melon soup

Ingredients:

• 3 small ripe melons weighing around 2 lb
4oz (1kg)
• one orange
• fresh mint
• 5½oz (150g) of cane sugar
• 18 fl oz (5 dl) sweet white wine
• one vanilla bean
• one saucepan
• a melon baller.

Method:

Zest the orange and melt the vanilla bean. Put the wine, orange zest, vanilla bean and the sugar into your saucepan. Reduce by a quarter on a medium hear, stirring regularly. Cut the melon in half and remove the seeds.
With the melon baller, scoop out small melon balls and place them in a deep dish or glass bowl.
Remove the vanilla bean from the win and place the melon balls in the hollowed-out melon that will serve as a presentation dish! Pour the hot mixture over the melon, leave to cool and place in the refrigerator. Serve chilled and garnish with mint leaves before serving.
