Lemon Drizzle Cake by Jayne, Gosport

Ingredients:

• 100 g marg
• 175 g caster sugar
• 175 g self raising flour
• 1 teaspoon baking powder
• 2 eggs
• 4 tablespoons milk
• grated rind of lemon
• juice of 1 lemon
• 100 g granulated sugar

Preparation Time:

Cooking Time:

40 min

Oven at 180 degrees c.
18 cm deep round cake tin lined with greaseproof paper.
Add all the ingrediants except the juice and the granulated sugar into a large bowl and beat well. Turn the mix into the tin.
Bake for 35-40 mins. mix the sugar and the lemon juice in a jug and let the sugar melt into the juice. When you get the cake out of the oven pour the sugar mix over the cake znd then leave it to cool. Turn the cake out when it is cold.
Really good with wipped cream!
