Hot and Sour Cabbage by Eamonn, Fleetwood

Ingredients:

• 1 lb white cabbage
• 2 tablespoons sugar
• 1 green pepper, cored and seeded
• 1 teaspoon salt
• 1 red pepper, cored and seeded
• 3 tablesponns oil
• 2 tablespoons soy sauce
• 4-6 dried hot chillis
• 2 tablespoons vinegar
• 12 black peppercorns

1. Thinly shred cabbage and peppers.

2. Mix together the soy sauce vinegar sugar and salt to make the sauce.

3. Heat the oil in preheated wok and add the dried chillis and peppercorns. After a few seconds add the cabbage and green end red peppers. Stir for 1-1 1/2 minutes then pour in the sauce mixture and continue stirring until well blended.

4. serve either hot or cold, garnish with sesame seed oil.
