Homemade Chinese Chicken Fried Rice by Jo, Peterborough

Ingredients:

• 1 onion finely chopped.
• 500g american easy cook rice
• 100g g margerine.
• 2 chicken stock cubes
• 750ml boiling water
• 200g cooked chicken chopped
• 100g mushrooms sliced.
• 2 eggs
• Dark soy sauce
• salt and pepper

In a large saucepan melt half the margerine and add the onions and saute for 2 minutes. Add rice and keep stirring for two minutes.
Add the stock cubes to the boiling water and add to the rice, bring back to boil, then turn down to the lowest heat and cover and cook for 20 minutes. Add small amount of water if rice is not cooked and cook for a further two minutes.
While rice is cooking make an omeletteusing the eggsin a wok or large frying pan, shred and put to one side. Fry chicken and chopped mushrooms for a couple of minutes until mushrooms are cooked.
Add the rice mixture and mix together thoroughly add shredded omelette, soy sauce and salt and pepper to taste.
