Grandma’s vegetable quiche

Ingredients:

• leftover cooked vegetables
• 3½oz (100g) grated Gruyere cheese
• 2 slices of ham
• ¾ oz butter
• 6 eggs
• ½ cup of breadcrumbs
• 12 fl oz (1/3 litre) milk
• salt, pepper.
• paprika
• parsley

Method:

Grease a pie dish with butter and coat with breadcrumbs. Dice the ham and place in a large bowl with eggs, milk, salt, pepper, paprika and parsley. Mix thoroughly to get an even texture. Pour a third of the quiche mixture onto the breadcrumb base in the pie dish. Add the vegetables, the diced ham and cover with the rest of the mixture and sprinkle with grated cheese. Place your quiche in a hot conventional oven for around thirty minutes on 230°C/450F/ gas 8.

Chef’s Tip: Find out if your quiche is cooked by pushing a knife into the centre. If the knife comes out clean, the quiche is cooked.
Simply remove the quiche from the oven and serve with a green salad. Bon appétit!
