Grandma’s apple cake

Ingredients:

• 5½oz (150g) FRANCINE cake flour
• 4 apples: Golden Delicious or Royal Gala
• 5½oz (150g) caster sugar
• 5½oz (150g) soft butter
• 3 eggs

Method:

1. Pre-heat the oven to 150°C/300°F/gas 2 5).

2. Place the soft butter and sugar in the Kenwood Chef food processor fitted with whisk K. Mix for 1 minute. Add the egg yolks. Mix for 1 minute. Add the cake flour and mix for 1 minute.

3. Beat the egg whites until firm and add to the flour, butter, eggs and sugar in large bowl. Peel the apples, cut into chunks and add to the dough.

4. Place the mixture in a Pyrex deep cake pan, greased with butter and lightly dust with flour, and cook for 30 min. Remove from the pan and leave to cool on a baking grid.
