Golden Lentil Soup by Vera, London
Ingredients:
1 large onion
15 g butter
225 g split red lentils
1 litre vegetable stock or water
2 tsp lemon juice
black peeper
Fry the onion in the butter for 10 minutes until tender, add the lentils and stir for 2 minutes, add the stock or water, bring to the boil and simmer for 20 minutes, whizz in a blender, add lemon juice and pepper to taste.
Satisfying, conforting soup, cheap and filling, when short of money.
